About

One of the lightest desserts that come to mind when Karabük is mentioned, Safranbolu Turkish Delight gains its color and aroma from real saffron grown in the region. It is sold fresh in the historical bazaars and shops located on the map.

Cuisine

This Turkish delight, which is the window of Karabük culture opening to the world, is less sugary and lighter compared to other delights in Türkiye. Mineral waters of the region and famous saffron are used in its production. It is generally served alongside coffee with double-roasted pistachios, hazelnuts, or just saffron varieties.

Ingredients

  • 1 gram of real Safranbolu saffron
  • 4 cups of granulated sugar
  • 1 cup of starch
  • Lemon salt and water
  • Pistachios or hazelnuts optional

Preparation

  1. Put the saffron in hot water a day in advance to let it release its color and aroma.
  2. Boil sugar, water, and lemon salt to a syrup consistency.
  3. Mix starch with saffron water and slowly add it to the boiling syrup, stirring constantly.
  4. Pour the thick mixture into trays decorated with nuts, slice after cooling, and coat with starch.
