  • Pit cooking rig
  • Salt
  • Water
  • Wood fire (oak)

Preparation

  1. Oak wood is burned in a specially prepared brick pit to get embers.
  2. The lamb is cleaned, salted, and hung on iron bars inside the pit.
  3. The mouth of the pit is completely sealed with mud to prevent air intake.
  4. The meat is cooked for 2-3 hours with its own steam and heat, then carved and served.
