Cuisine

The Safranbolu Bükme is made by filling thinly rolled dough with a mixture of minced meat, onions, and especially spinach or chard. Baked in wood-fired stone ovens, this delicacy is served hot with melted butter brushed on top. Ingredients

  • 500 grams of flour
  • 1 packet of dry yeast
  • 300 grams of spinach or chard
  • 150 grams of minced meat
  • 2 onions
  • 2 tablespoons of butter
  • Salt and black pepper

Preparation

  1. Knead a soft dough using flour, yeast, salt, and warm water, then leave it to ferment.
  2. For the filling, sauté the onions and minced meat, then add finely chopped spinach and season with spices.
  3. Take pieces from the dough and roll them out into long, thin shapes.
  4. Spread the filling in the middle, fold the edges over each other to close, and bake until golden brown.
