Cuisine

Protected throughout Italia and especially in Naples, Pizza Margherita was named after Queen Margherita. The colors of its ingredients—red, white, and green—directly represent the flag of Italia. An authentic Margherita must be baked in a wood-fired oven at high temperatures. Check out the Harita section for traditional pizzeria locations.

Ingredients

  • 500g Type 00 flour
  • 300ml water
  • 10g salt
  • 3g fresh yeast
  • 400g San Marzano tomato sauce
  • 300g fresh mozzarella cheese
  • Fresh basil leaves
  • Extra virgin olive oil

Preparation

  1. Mix flour, water, yeast, and salt to knead a smooth dough, then let it ferment for 24 hours.
  2. Divide the dough into balls and stretch them by hand into a round shape.
  3. Spread crushed San Marzano tomato sauce over the top and add mozzarella slices.
  4. Bake in a preheated oven at maximum temperature or a stone oven until the crust is golden.
  5. Garnish with fresh basil leaves and a drizzle of extra virgin olive oil before serving.
