  • Cleaned pork rind (cotica)
  • Tomato paste and diced tomatoes
  • Celery, carrots, and onions
  • Extra virgin olive oil, salt, and pepper

Preparation

  1. Soak the beans overnight and boil them the next day until soft.
  2. Cut the pork rind into strips and boil separately to remove excess fat.
  3. Sauté carrots, celery, and onions in olive oil in a large pot, then add the tomatoes.
  4. Combine the beans and pork rind into the sauce and simmer on low heat until fully integrated.
