Cuisine

Fileja is prepared with flour and water using traditional methods passed down through generations in Vibo Valentia. It is typically served with the region's famous 'Nduja or a rich goat meat sauce. You can locate the best spots to try this dish on our Map section.

Ingredients

  • 400g Durum wheat flour
  • Around 200ml warm water
  • A pinch of salt
  • 100g 'Nduja for the sauce
  • 400g tomato purée for the sauce

Preparation

  1. Sift the flour onto a work surface, make a well in the center, and add salt and warm water.
  2. Knead for at least 10 minutes until a smooth and firm dough is formed.
  3. Take small pieces of dough, roll them into thin sticks, and shape them by wrapping around a thin reed called 'dinaculu'.
  4. Boil the pasta in salted water until al dente, then toss with a warm 'Nduja tomato sauce and serve.
