Ingredients
- 400g Durum wheat flour
- Around 200ml warm water
- A pinch of salt
- 100g 'Nduja for the sauce
- 400g tomato purée for the sauce
Preparation
- Sift the flour onto a work surface, make a well in the center, and add salt and warm water.
- Knead for at least 10 minutes until a smooth and firm dough is formed.
- Take small pieces of dough, roll them into thin sticks, and shape them by wrapping around a thin reed called 'dinaculu'.
- Boil the pasta in salted water until al dente, then toss with a warm 'Nduja tomato sauce and serve.
