Ingredients

  • Slices of stale bread
  • Wild chicory or fresh greens
  • Extra virgin olive oil
  • Garlic and chili pepper
  • Eggs
  • Tomato sauce

Preparation

  1. Sauté garlic, chili pepper, and olive oil in a deep pot.
  2. Add tomatoes and chopped wild greens, then pour in water and bring to a boil.
  3. Crack the eggs directly into the simmering broth and cook gently.
  4. Arrange the stale bread slices in serving bowls and ladle the hot soup and eggs over them.
