Stuffed black cabbage is made with a unique style in Cilimli cuisine by using cracked corn or local rice. Plenty of onions and special spices added to the filling enhance the flavor. Ingredients
- 2 bunches of fresh black cabbage leaves
- 1.5 cups of Cilimli rice
- 2 onions
- 1 tablespoon of tomato paste
- Half a tea glass of olive oil
- Salt, black pepper, mint
Preparation
- Wash the black cabbage leaves, boil them gently in hot water, and shock them in cold water.
- Finely chop the onions and sauté them in olive oil, then add tomato paste and washed rice.
- Add the spices and half a cup of hot water, cooking the filling until the rice absorbs the water.
- Remove the thick veins of the leaves, put some filling inside, and roll them tightly.
- Place the stuffed leaves in a pot, add water and a little olive oil, and cook over low heat until the leaves are tender.
