The Yenice Forests, one of the rare protected areas in the world, host a tremendous variety of mushrooms after the autumn rains. These mushrooms, carefully collected by the local people, turn into one of the most natural dishes of Karabük cuisine. You can try this fresh taste in restaurants in the district center or in ecotourism facilities on the Harita, enjoying the hidden forest flavors of Türkiye.

Ingredients

  • 500 g Yenice Forest Mushrooms (Kanlica etc.)
  • 2 Medium Onions
  • 2 tablespoons Village Butter
  • 3 cloves of Garlic
  • Salt, Black Pepper, and Red Pepper Flakes

Preparation

  1. Fresh mushrooms collected from Yenice forests are cleaned with a damp cloth and chopped into large pieces.
  2. Village butter is melted in a large pan, and the sliced onions and garlic are sautéed until golden brown.
  3. The chopped mushrooms are added to the pan and sautéed over high heat until they release and reabsorb their juices.
  4. Salt and spices are added just before removing from the heat, and it is served hot.
