Noodles, an indispensable part of winter preparations, hold a very special place in the culinary culture of Yenice. The intensely flavored kesh cheese, dried in the region, is grated, melted in butter, and poured over the noodles. You can taste this traditional flavor, which is frequently consumed throughout Karabük, in the local restaurants of the district, and it's also a staple at village gatherings. It represents one of the most authentic combinations of carbohydrate and local dairy in Türkiye.

Ingredients

  • 400 g Homemade Yenice Noodles
  • 100 g Grated Dried Kesh Cheese
  • 1 cup of Crushed Yenice Walnuts
  • 3 tablespoons Village Butter
  • Hot Spring Water and Salt for boiling

Preparation

  1. Homemade noodles are boiled in salted water until al dente and then drained.
  2. Yenice-style hard kesh cheese is grated using the fine side of a grater.
  3. Village butter is melted in a pan, and after lightly roasting the crushed walnuts, the grated kesh is added and stirred until fragrant.
  4. The drained noodles are placed on a serving plate, and the hot butter mixture with kesh and walnuts is poured over them before serving.
