Cuisine

A heritage of Nomadic (Yoruk) culture, Sikma is frequently sold in breakfast cafes and roadside stalls throughout Düziçi. The dough is rolled very thin, spread with butter, and consumed hot. You can find the best local stalls on the Harita.

Ingredients

  • 3 cups flour
  • 1 cup warm water
  • 200 grams curd cheese
  • 1 onion
  • 50 grams butter
  • Salt and chili flakes

Preparation

  1. Knead a soft dough with flour, salt, and water, divide into balls, and rest for 30 minutes.
  2. For the filling, finely chop the onion, saute in butter, and mix with curd cheese and spices.
  3. Roll out the dough balls into thin flatbreads and cook both sides on a griddle or pan.
  4. Spread butter on the hot flatbread, place the filling, and roll tightly before serving.
