Produced without any artificial yeast or sugar, Teleme dessert is obtained by fermenting freshly milked warm goat milk with the sap of wild fig trees. Ingredients
- 1 liter of fresh goat milk (raw and warm)
- 4-5 drops of fresh green fig sap
- Walnuts for topping (optional)
- Local honey (optional)
Preparation
- Place freshly milked goat milk into a clean bowl while keeping its warmth (around 35-40°C).
- Drip the sap coming from the stem of a freshly picked green fig into the milk.
- Stir the milk quickly a few times with a spoon.
- Cover the bowl and let it sit at room temperature for about 15-20 minutes to curdle.
- Cool the dessert, which reaches a yogurt-like consistency, and serve with honey and walnuts if desired.
