A healing winter soup prepared with crushed wheat and yogurt in the Sumbas district. Sun-dried using traditional methods, it represents the local identity of Osmaniye province.

Cuisine

Unlike regular tarhana, Sumbas tarhana is made by mixing boiled crushed wheat with sour yogurt and wild oregano. The mixture is shaped and dried on straw mats under the sun. In winter, it is cooked with garlic and mint. Check the local producers marked in the Harita section.

Ingredients

  • 3 cups dried Sumbas tarhana
  • 1 tablespoon butter
  • 4 cloves of garlic
  • 1 tablespoon dried mint
  • 1 teaspoon red pepper flakes
  • 6 cups hot water

Preparation

  1. Soak the dried tarhana pieces in warm water for a few hours to soften them.
  2. Transfer the softened tarhana to a pot, add hot water, and bring to a boil while stirring continuously.
  3. Melt butter in a small pan, add crushed garlic and dried mint, and saute gently.
  4. Pour the garlic sauce into the boiling soup, simmer for 5 minutes, and serve hot.
