Cuisine

Tirsik, which has a very important place in Kadirli cuisine, is frequently consumed during winter. Made by fermenting wild tirsik herbs collected from nature, this soup is one of the most authentic dishes in the Osmaniye region.

Ingredients

  • 1 bunch of tirsik herbs (wild beet)
  • 1 cup of cracked wheat
  • 1 cup of chickpeas
  • 1 cup of yogurt
  • Flour and water

Preparation

  1. Chop the tirsik herbs very finely and wash them thoroughly.
  2. In a large pot, mix water, yogurt, flour, cracked wheat, and chickpeas.
  3. Add the chopped herbs to the pot and let it sit in a warm environment for a day to ferment.
  4. The next day, place the soured soup on the stove and cook it over low heat for a long time.
