Cuisine

This unique snack wonderfully combines the oceanic and African influences of the Cabo Verde cuisine. The outside is usually a dough made from a mixture of boiled potatoes and cornmeal, while the inside is stuffed with fresh tuna, onions, and plenty of local chili peppers (malagueta).

It tastes best when consumed hot and fresh. Especially in coastal towns on the map, it is very popular to serve it as an afternoon snack with a cold beverage.

Ingredients

  • 250g boiled and mashed potatoes
  • 150g cornmeal or wheat flour
  • 1 can or 200g fresh tuna
  • 1 large onion, finely chopped
  • 2-3 malagueta peppers (or chili flakes)
  • Oil for frying
  • Salt, black pepper, and a bit of tomato paste

Preparation

  1. Knead a soft dough with the boiled potatoes and flour, then let it rest.
  2. Sauté the onions in a pan with a little oil, then add the tuna, tomato paste, and finely chopped hot peppers to prepare the filling.
  3. Tear off small pieces of dough, flatten them in your palm, and place the filling in the center.
  4. Fold the dough into a half-moon shape and press the edges with a fork.
  5. Deep fry in hot oil until both sides are golden brown.
