Cuisine

Pudim de Queijo is one of the cornerstones of Cabo Verde dessert culture. Since goat breeding is common in the country, they are quite successful in producing fresh goat cheese, and this dessert is made by blending local goat cheese with condensed milk and eggs.

Baked in a water bath, this dessert is similar in consistency to classic caramel flan, but the slightly salty and rich aroma provided by the cheese makes it different. It goes great with coffee at local bakeries or dessert shops on the map.

Ingredients

  • 1 can of condensed milk
  • Same can measure of regular milk
  • 3 eggs
  • 150g grated fresh goat cheese
  • 1 cup of granulated sugar for the caramel sauce
  • 1 teaspoon of vanilla extract

Preparation

  1. Melt the sugar in a pan over low heat until caramelized and spread it on the bottom of a baking dish.
  2. In a mixing bowl, whisk the eggs, condensed milk, regular milk, and vanilla well.
  3. Add the grated goat cheese to the mixture and stir gently.
  4. Pour the mixture into the baking dish with caramel on the bottom.
  5. Place the dish in a larger tray filled with water (water bath) and bake in a preheated 180°C oven for about 45-50 minutes.
  6. Once cooled, invert it and serve.
