Cuisine

Cachupa prepared with fresh fish caught at the Tarrafal harbor is the most nutritious dish of the area. Often served in seaside eateries located near the Harita zone, it reflects the maritime culture of Cabo Verde.

The combination of hominy, beans, and local spices creates a rich stew that keeps fishermen energized throughout the day.

Ingredients

  • 400g hominy corn
  • 200g kidney beans or local beans
  • 300g fresh tuna or local coastal fish
  • 1 large onion
  • 3 cloves of garlic
  • 2 bay leaves
  • Extra virgin olive oil and salt

Preparation

  1. Soak the corn and beans in water overnight to soften.
  2. Boil the corn, beans, and bay leaves in a large pot for about 1.5 hours until tender.
  3. In a separate pan, sauté the chopped onion and garlic in olive oil until golden brown.
  4. Add the fresh fish chunks and the sautéed mixture into the pot, simmering for another 20 minutes until well combined.
