Ingredients

  • 1 kg green or semi-ripe papaya
  • 750g granulated sugar
  • 1 cinnamon stick
  • Zest of 1 lemon
  • 400g traditional São Nicolau goat cheese

Preparation

  1. Peel the papaya, remove the seeds, and slice or grate it finely.
  2. In a wide pot, combine the papaya, sugar, cinnamon stick, and lemon zest.
  3. Cook on low heat in its own juices until the papaya turns translucent and jam-like, for about 1 hour.
  4. Allow it to cool completely, then serve directly over thick slices of room-temperature goat cheese.
