Ingredients
- 1 kg green or semi-ripe papaya
- 750g granulated sugar
- 1 cinnamon stick
- Zest of 1 lemon
- 400g traditional São Nicolau goat cheese
Preparation
- Peel the papaya, remove the seeds, and slice or grate it finely.
- In a wide pot, combine the papaya, sugar, cinnamon stick, and lemon zest.
- Cook on low heat in its own juices until the papaya turns translucent and jam-like, for about 1 hour.
- Allow it to cool completely, then serve directly over thick slices of room-temperature goat cheese.
