The Yalova Kebab with Puff Pastry is a main course that carries traces of Ottoman palace cuisine. It is prepared by sautéing diced lamb with peas, carrots, and potatoes, then baking it inside crispy puff pastry layers. It is considered one of the most prestigious dishes of the city within Türkiye.

Ingredients

  • 500 grams diced lamb meat
  • 6 sheets of puff pastry
  • 1 cup boiled peas
  • 1 diced carrot
  • 1 chopped onion
  • 1 tablespoon tomato paste
  • Salt, thyme, vegetable oil

Preparation

  1. Sauté the onions and lamb meat in vegetable oil until the meat releases and absorbs its juices.
  2. Add tomato paste, carrots, and peas, sauté for a few more minutes, add spices, and let it cool.
  3. Place the meat filling into the center of the soft puff pastry sheets and wrap them like a pouch.
  4. Turn them upside down onto a baking tray, brush with egg yolk, and bake at 180°C until golden brown.
