Thermal Soup is an indispensable part of winter days in the culinary culture of Yalova, thanks to the perfect harmony of vegetables and flour dressing. Highly nutritious with celery leaves, carrots, and potatoes, it differs from generic vegetable soups in Türkiye through its special dressing.

Ingredients

  • 1 carrot
  • 1 potato
  • 1/2 cup boiled peas
  • 1 tablespoon flour
  • 1 cup yogurt
  • 1 egg yolk
  • Celery leaves, butter, salt

Preparation

  1. Cut the carrot and potato into small cubes and boil them in water until soft.
  2. Add the peas to the boiled vegetables. In a separate bowl, whisk yogurt, flour, and egg yolk to prepare the dressing.
  3. Warm the dressing by adding a ladle of hot soup water, then slowly pour it into the pot while stirring.
  4. After boiling for a few minutes, top with celery leaves heated in butter and serve.
