It is a very hearty traditional soup belonging to the Sivas region, prepared with lentils and wheat rye.

Cuisine

This soup is frequently cooked in Sivas homes, especially during winter months. Pesahut soup, which you can find in local restaurants in the Map section, is one of the original pulse soups of Türkiye cuisine.

Ingredients

  • 1 cup of green lentils
  • 1 cup of cracked wheat
  • 1 onion
  • 2 tablespoons of butter
  • Salt and dried mint

Preparation

  1. Cracked wheat and green lentils are boiled in separate pots.
  2. The boiled ingredients are combined in a large pot and boiled together.
  3. In a separate pan, chopped onions are sautéed in butter.
  4. Mint is added to the sautéed onions, poured over the soup, and served hot.
