Cuisine

Nokul is a traditional pastry that has been made in and around Samsun for centuries. Thanks to the dried fruits and nuts it contains, it can stay fresh for a long time without going stale. It is recognized across Türkiye as one of the signature tastes of the Black Sea coastline.

Ingredients

  • 1 cup of yogurt
  • 1 small glass of vegetable oil
  • 100g melted butter
  • 1 packet of baking powder
  • Flour as needed
  • 1 cup of ground walnuts and raisins

Preparation

  1. Knead yogurt, vegetable oil, butter, baking powder, and flour to get a soft dough consistency.
  2. Divide the dough into balls and roll each one out thinly using a rolling pin.
  3. Brush melted butter on the rolled dough, then spread the walnut and raisin mixture over it.
  4. Roll the dough tightly into a log and cut into two-finger-wide slices, then place them on a tray.
  5. Bake in an oven preheated to 190 degrees until well browned, and serve cold.
