Bafra Pide is a very special delicacy with a geographical indication registration. Being an indispensable Sunday morning tradition in Samsun culinary culture, this pide leaves an unforgettable taste on the palate with genuine butter melted inside after baking. It is widely known across Türkiye for its distinct crispiness.
Ingredients
- 500g special pide flour
- 280ml water
- 10g fresh yeast
- 350g lean minced beef
- 2 large onions
- 80g butter
- Black pepper and salt
Preparation
- Knead flour, water, and yeast to obtain a firm dough and let it rest.
- Lightly sauté the minced meat in its own juice, then add finely chopped onions, salt, and pepper, and let it cool.
- Roll out the dough with a rolling pin into a very long and thin strip.
- Place the prepared meat filling in the middle, and close completely by joining the two edges at the top.
- Bake in a stone oven at high heat until crispy, then brush with butter and slice upon removal.
