Carsamba Kivratma is one of the most important geographically indicated desserts of Samsun cuisine. Shaped by wrinkling very thinly rolled dough sheets, this delicacy is traditionally served during religious holidays and special occasions. It is a light alternative across Türkiye due to its oil-free and syrup-free nature.
Ingredients
- 3 phyllo dough sheets
- 250g finely ground Black Sea hazelnuts
- 100g granulated sugar
- 50g melted butter (for topping)
- 1 egg yolk
Preparation
- Mix the finely ground hazelnuts with granulated sugar to create the filling.
- Lay the dough sheet on a flat surface and sprinkle the hazelnut and sugar mixture evenly over it.
- Roll the dough loosely around a thin rolling pin, wrinkle it from both ends toward the middle, and slide it off.
- Place the wrinkled rolls on a baking tray and brush with melted butter and egg yolk.
- Bake at 180 degrees until the top turns golden brown and crispy.
