In the Kaynasli district, which hosts a significant Circassian population, Circassian Chicken prepared using traditional methods is highly popular. It is prepared by blending shredded chicken meat with specially crushed walnuts, garlic, and stale bread crumbs. This dish, also frequently made across Duzce, is served with walnut oil mixed with red pepper flakes drizzled on top. Compared to versions in other parts of Turkiye, great care is taken in Kaynasli to completely extract the oil from the walnuts. You can use the Map section to view locations.
Ingredients
- 1 whole chicken
- 2 glasses of ground walnuts
- 3 cloves of garlic
- 2 slices of stale bread crumbs
- 1 teaspoon of ground red pepper
- Salt, black pepper
- Chicken broth
Preparation
- Boil the whole chicken in plenty of water, then separate the meat from the bones and shred it finely.
- Crush the walnuts in a mortar to extract their oil, and set this oil aside for serving.
- Soak the stale bread crumbs in chicken broth; mix with crushed garlic, spices, and crushed walnuts to get a smooth sauce.
- Thoroughly blend the shredded chicken meat with the prepared walnut sauce in a deep bowl.
- Place the dish on a serving plate and drizzle the reserved walnut oil and red pepper mixture on top.
