Cuisine

Tarhana, dried by the women of Karakeceli in summer, is one of the winter food sources of the Kırıkkale region. Its difference from other tarhanas in Türkiye is the intensive use of fresh strained yogurt. Check the Map section for points of sale.

Ingredients

  • 1 kg strained yogurt
  • 1 kg flour
  • 1 tomato and red pepper
  • 1 onion
  • Dried mint and salt

Preparation

  1. Boil the tomato, pepper, and onion, then puree them.
  2. Knead the strained yogurt, flour, and pureed ingredients into a dough.
  3. Let the dough rest for a few days to ferment.
  4. Break into small pieces, dry on a cloth, and crumble into powder.
