Flavors, dishes and restaurants

Cuisine

In Bahçelievler, Sundays are busy at bakeries as homemade fillings meet thin dough. Locations of the finest bakeries can be tracked on the Harita. It represents a urban adaptation of Türkiye's pide heritage in İstanbul.

The fundamental rule of this tradition is never using tomato paste, letting the flavor come solely from fresh vegetable juices and meat fat.

Ingredients

  • 500g medium-fat minced beef
  • 2 green peppers (finely chopped)
  • 2 tomatoes (diced)
  • 1 bunch of parsley
  • Bread dough (obtained from bakery)

Preparation

  1. Mix minced meat, chopped tomatoes, peppers, and parsley with salt in a bowl while raw.
  2. Roll out the dough into a long, thin boat shape.
  3. Spread the minced meat mixture evenly in the middle and fold the edges inward.
  4. Bake in an oven preheated to 220 degrees for about 15-20 minutes until the crust turns golden.
