Cuisine

Artisan meatballs, an integral part of Bahçelievler culinary culture, are indispensable for lunch menus, especially in old bazaar areas. The difference from other meatball types in İstanbul is the use of rested bread crumbs and a special beef-lamb blend from local butchers. You can experience this flavor in the historic central restaurants located in the Harita section.

In preparation, grinding the meat twice and resting it overnight is the secret. In line with the gastronomic traditions of Türkiye, it is commonly served with bean salad (piyaz) and ayran.

Ingredients

  • 500g ground beef brisket
  • 150g ground lamb flank
  • 1 stale bread crumb (crumbled)
  • 1 medium onion (grated)
  • 1 teaspoon cumin and black pepper
  • 1 dessert spoon salt

Preparation

  1. Mix the ground beef and lamb in a deep bowl.
  2. Add the grated onion, bread crumbs, and all spices to the meat.
  3. Knead the mixture for at least 15 minutes until smooth.
  4. Shape into walnut-sized pieces and grill on a cast-iron skillet.
