Kneaded with traditional methods and left for a long fermentation process, the Hasankeyf tandoor bread is baked by slapping dough directly onto the vertical clay walls of tandoor ovens heated by wood fire. This baking technique gives the bread a unique aroma and long-lasting freshness. It perfectly accompanies juicy meat dishes across Batman.

Ingredients

  • 1 kilogram of whole wheat flour
  • 1 pack of fresh yeast
  • 2 teaspoons of salt
  • Warm water (as needed)
  • A bit of yogurt or water for the topping

Preparation

  1. Sift the flour into a large bowl, open a well in the center, and add yeast and salt.
  2. Slowly add warm water and knead into a soft, non-sticky dough.
  3. Cover the dough with a clean cloth and leave it to ferment for about 1 hour.
  4. Shape the fermented dough into balls and flatten them into oval shapes by hand.
  5. Slap the dough onto the inner wall of the pre-heated clay tandoor and bake until golden brown.
