The traditional Hasankeyf kibbeh consists of an outer shell made of fine cracked bulgur kneaded with minced meat, and a richly spiced ground meat filling. Ingredients

  • 3 cups of fine bulgur
  • 300 grams of lean ground meat (for the shell)
  • 500 grams of medium-fat ground meat (for the filling)
  • 3 onions
  • 1 cup of ground walnuts
  • 1 tablespoon of pepper paste
  • Red pepper flakes, black pepper, salt

Preparation

  1. For the filling, finely chop the onions and sauté with the ground meat, then add paste, walnuts, and spices, leaving it to cool.
  2. Soak the bulgur with warm water, add the lean meat and salt, then knead thoroughly until it reaches a paste-like consistency.
  3. Take walnut-sized pieces from the dough and open them up thinly using your finger.
  4. Fill with the cooled meat filling and seal the edges into a lemon-like shape.
  5. Boil in salted boiling water until the kibbeh rises to the surface, then serve hot.
