Cuisine
Developed through the blending of nomadic and settled cultures in historical Hasankeyf, Sham Pastry is made by folding unleavened thin dough into a half-moon shape. The filling includes onions, ground meat, parsley, and sometimes wild herbs. It is frequently consumed alongside local tea in Batman tea gardens.
Ingredients
- 4 cups of flour
- 1 teaspoon of salt
- Water (to bind the dough)
- 400 grams of ground meat
- 2 medium onions
- 1 bunch of parsley
- Black pepper, red pepper flakes
Preparation
- Mix flour, water, and salt, knead until you get a firm and smooth dough, then let it rest.
- For the filling, finely chop the onion and parsley, mix and knead with raw ground meat and spices.
- Roll out small pieces of dough into thin circles using flour.
- Spread the meat filling thinly over half of the dough, fold the other half over it, and press the edges.
- Cook on a dry pan or iron griddle on both sides, and brush with butter while hot.
