Ingredients

  • 500 grams of seasonal fish (sea bass or gurnard)
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 2 tablespoons of flour
  • 1 tablespoon of butter
  • Juice of half a lemon

Preparation

  1. Clean the fish and boil it together with the carrot, onion, and celery stalk.
  2. Debone the boiled fish and shred the meat into small pieces.
  3. In a separate pot, lightly sauté the butter and flour.
  4. Slowly add the strained fish broth to the sautéed flour while stirring.
  5. Add the fish meat, season with lemon juice, and simmer for 10 minutes.
