Cuisine

Despite the rapid development of the district, this flavor, kept alive in pastry shops in the old bazaar areas, is prepared with hand-rolled thin dough. A mixture of local cheeses and fresh parsley is preferred for the filling. It is one of the most popular products consumed with tea in the early morning by Beylikdüzü tradesmen and workers. Ingredients

  • 3 sheets of phyllo dough or hand-rolled dough
  • 250 grams of feta cheese
  • Half a bunch of parsley
  • 1 Turkish tea glass of milk
  • 1 egg
  • 50 grams of melted butter

Preparation

  1. Whisk milk, melted butter, and egg in a bowl to prepare the liquid mixture.
  2. Grease a baking tray and lay the first sheet of dough, letting the edges hang out.
  3. Dip the other sheets into the sauce, tear them apart, place them in the tray, and spread the crumbled cheese and chopped parsley mixture in between.
  4. Fold the hanging edges over the top, brush with the remaining sauce, and bake at 180 degrees Celsius until golden brown.
