Cuisine

Prepared with wild greens, this flatbread is widely consumed in Akçakoca especially during spring. Baked in wood-fired stone ovens, it is a plant-based signature of Düzce cuisine. You can purchase them fresh at local weekly markets.

Ingredients

  • 500 g flour
  • 1 pack of fresh yeast
  • 1 teaspoon of salt
  • For filling: 500 g chard or wild greens
  • 2 onions
  • 2 tablespoons of oil, salt, and black pepper

Preparation

  1. Mix flour, yeast, water, and salt to form a soft dough and let it ferment.
  2. Finely chop the wild greens and mix them with chopped onions and spices.
  3. Roll the dough pieces into elongated shapes and spread the green filling in the middle.
  4. Fold the edges slightly inwards and bake at high temperature in the oven.
