Natural yogurts obtained from livestock farming in the high-altitude villages of Ovacık are the flavor secret of this soup. Hardened with rice, egg, and flour, the soup is served with melted butter and mint poured on top. Although common across Türkiye, the quality of dairy here gives it a unique aroma. Ingredients
- 2 cups of strained yogurt
- 1 small coffee cup of rice
- 1 egg yolk
- 1 tablespoon of flour
- 2 tablespoons of butter and dried mint
Preparation
- Wash the rice and boil it in enough water until it softens.
- Whisk the yogurt, flour, and egg yolk in a bowl until smooth.
- Temper the yogurt mixture by adding some hot water from the boiled rice.
- Slowly pour the mixture into the pot, stir continuously until it boils, and drizzle with melted mint butter.
