Cuisine

Served especially during weddings and local festivals, Xerém is one of the pillars of São Salvador do Mundo cuisine. In the rural restaurants indicated on the Map, you can try variations boiled with water, salt, and fat, enhanced with dried meat stock.

The ingredient obtained by grinding corn in stone mills is cooked on low heat with continuous stirring. This flavor provided a nutritious alternative during tough conditions of rural life across Cabo Verde.

Ingredients

  • 500g finely ground corn meal
  • 1 liter meat or chicken broth
  • 1 finely chopped onion
  • 50g butter or lard
  • Salt and black pepper

Preparation

  1. Sauté the onions in butter until slightly translucent.
  2. Add the meat broth and bring to a boil.
  3. Gradually pour the corn meal into the boiling water, stirring constantly to prevent lumps.
  4. Cook on low heat for about 30 minutes until the mixture reaches a rice-like consistency and the corn is tender.
