Produced by Ulus artisans using special techniques passed down from past to present, this halva is prepared by pounding sugar brought to a wax consistency with walnut kernels. Using local walnuts collected from the mountain villages of the Bartın region is the secret to the halva's flavor. You can check the town bazaar center where you can buy this dessert via the Map.
Ingredients
- 2 cups of granulated sugar
- 1 cup of water
- 1 tablespoon of lemon juice
- 2 cups of shelled local walnut kernels
- 1 tablespoon of butter
Preparation
- Boil granulated sugar and water in a pot, add lemon juice when it starts to thicken, and boil until it reaches a wax-like consistency.
- Remove the thickened syrup from heat, pour it onto a marble counter or a greased tray, and let it cool.
- Combine the cooled and whitened sugar mass with walnut kernels and mix by pounding in large wooden mortars.
- When the walnuts are completely integrated into the sugar and it takes a halva consistency, slice and serve.
