Cuisine

Grape leaves grown across Tokat are known for their thinness and sour taste. Locally produced cracked wheat or rice is used for the filling. Ingredients

  • 500 g Tokat grape leaves
  • 2 cups of rice or cracked wheat
  • 2 onions
  • 1 tablespoon of tomato paste
  • Olive oil, mint, black pepper, salt

Preparation

  1. Wash the pickled leaves in hot water to remove excess salt.
  2. Chop onions and sauté in olive oil, then add tomato paste, rice, and spices to prepare the filling.
  3. Place the filling inside the leaves and roll them tightly.
  4. Place the rolls in a pot, add water and olive oil, and cook over low heat.
