Cuisine

Traditionally consumed at breakfast, Tokat Cokeleklisi is made with a filling obtained by kneading curd cheese with mint, chili flakes, and butter. Baked in wood-fired stone ovens in the center of Tokat, this pastry is indispensable for locals. You can check the location of the bakeries on the Map tab. It differs from other pastries in Türkiye with its unique filling.

Ingredients

  • 500 g flour
  • 1 packet of yeast
  • 300 g Tokat curd cheese
  • 1 tablespoon of dried mint
  • 2 tablespoons of butter

Preparation

  1. Knead a soft dough with flour, water, yeast, and salt, and leave to ferment.
  2. Mix the curd cheese with mint and melted butter to prepare the filling.
  3. Divide the dough into balls, roll them into oval shapes, and spread the cheese filling in the middle.
  4. Bake in a preheated hot oven until the edges are golden brown.
