Nikitli Soup, frequently cooked in Tokat homes especially during winter, is made with green lentils and small hand-cut dough pieces called nikit. It is served with hot butter and mint poured over it. Ingredients
- 1 cup of green lentils
- 1 cup of hand-cut soup dough
- 1 onion
- 2 tablespoons of butter
- Mint, chili flakes, salt
Preparation
- Boil the green lentils until soft and drain the water.
- In a separate pot, sauté the chopped onions in butter.
- Add water to the onions and bring to a boil, then add the lentils and hand-cut dough.
- Boil until the dough is cooked, then serve by drizzling butter melted with mint over it.
