Cuisine

Nikitli Soup, frequently cooked in Tokat homes especially during winter, is made with green lentils and small hand-cut dough pieces called nikit. It is served with hot butter and mint poured over it. Ingredients

  • 1 cup of green lentils
  • 1 cup of hand-cut soup dough
  • 1 onion
  • 2 tablespoons of butter
  • Mint, chili flakes, salt

Preparation

  1. Boil the green lentils until soft and drain the water.
  2. In a separate pot, sauté the chopped onions in butter.
  3. Add water to the onions and bring to a boil, then add the lentils and hand-cut dough.
  4. Boil until the dough is cooked, then serve by drizzling butter melted with mint over it.
