Combining the traditional pottery art of Nevşehir with its culinary culture, Testi Kebab is prepared with lamb, garlic, and tomatoes. The ingredients are sealed inside a clay pot with dough and cooked over embers. It is served by breaking the pot at the table. You can find authentic restaurants serving this dish on the Harita.
Ingredients
- 1 kg cubed lamb meat
- 10 cloves of garlic
- 2 tomatoes
- 4 green peppers
- 1 tablespoon butter
- Salt, black pepper, thyme
Preparation
- Mix the meat, chopped tomatoes, peppers, and garlic in a bowl with spices.
- Fill the traditional pottery pot from Nevşehir with the mixture and top with butter.
- Seal the opening of the pot with a stiff dough made from flour and water.
- Cook over oak charcoal embers or in an oven for 2-2.5 hours, then break the pot to serve.
