Cuisine

It is generally served as a starter or dessert at weddings and fast-breaking dinners during Ramadan. It is one of the most authentic examples of Bayburt cuisine. Ingredients

  • 500 grams of dried rosehip
  • 1 cup of dried apricots
  • 1 tea glass of raisins
  • 1 tea glass of cracked wheat
  • 1 cup of granulated sugar
  • Hazelnuts or walnuts for topping

Preparation

  1. Boil the rosehip and pass it through a strainer to extract its smooth puree.
  2. Add the pre-boiled cracked wheat and small chopped dried fruits into the obtained rosehip juice.
  3. Boil until the fruits soften, then add sugar to let it thicken.
  4. Pour into serving bowls, let it cool, and garnish with plenty of hazelnuts or walnuts.
