Cuisine

Traditionally prepared during festive seasons in the historic stone houses of Idil, Kitel is cooked by boiling. The intense aroma of basil in its filling distinguishes it from other kibbeh varieties across Türkiye. You can pinpoint local diners serving this via the Harita section.

Ingredients

  • 2 cups fine bulgur
  • 1 cup semolina
  • 300 g minced beef
  • 2 medium onions
  • 1 tablespoon dried basil

Preparation

  1. Soak bulgur and semolina with warm water, add salt, and knead into a smooth dough.
  2. Sauté the minced beef with chopped onions and basil to prepare the filling, then let it cool.
  3. Take small pieces of dough, roll them thin, fill with the meat mixture, and seal into flat rounds.
  4. Boil in salted water until the dumplings float to the top.
