Cuisine

Known for its scent rising from bakeries during Christian holiday seasons, this pastry is a symbol of Idil streets. Thanks to the seven kinds of spices inside, it is the only baked good across Sirnak that stays fresh for months. Check the Harita tab for bakery locations.

Ingredients

  • 5 cups flour
  • 1 cup melted butter
  • 1 tablespoon mahleb
  • 1 teaspoon ginger
  • 1 cup milk and dry yeast

Preparation

  1. Mix warm milk, yeast, and sugar and let it activate.
  2. Combine flour, melted butter, mahleb, and ginger, then knead into a smooth dough.
  3. Rest the dough, then shape it using traditional wooden molds.
  4. Brush with egg yolk and bake at 180°C until golden brown.
