Preparation
- Wash the sugar beets thoroughly, peel, and slice them thinly.
- Boil the sliced beets with water in large cauldrons until soft.
- Crush the boiled beets to extract their juice and strain through a cheesecloth.
- Add molasses clay to clarify the extracted juice and let it rest.
- Boil the clarified juice for hours over a wood fire until it reaches a thick consistency.
