Aksaray Sikmasi is made by wrapping local tulum cheese or curd cheese with butter inside hot flatbread cooked on a griddle. Ingredients

  • 4 cups of flour
  • 1 teaspoon of yeast
  • Warm water and salt
  • 200 g Aksaray tulum cheese
  • 50 g butter (room temperature)
  • 1 finely chopped onion (optional)

Preparation

  1. Knead a soft dough with flour, yeast, salt, and warm water, then leave to ferment.
  2. Take pieces from the dough and roll them out to medium size using a rolling pin.
  3. Cook the dough sheets on a hot griddle or non-stick pan on both sides.
  4. Spread butter inside the hot bread immediately and add the cheese filling.
  5. Roll the bread tightly and serve hot.
