Cuisine

As one of the most important symbols of Sirvan culinary culture, the Zivzik pomegranate is consumed fresh due to its juicy seeds and is also used to make pomegranate molasses. Ingredients

  • 5 kg of Sirvan Zivzik Pomegranates
  • 1 tablespoon of salt (optional)
  • Clean cheesecloth
  • Large boiling pot
  • Glass storage jar

Preparation

  1. Wash the pomegranates, cut them in half, and separate the seeds using a wooden spoon.
  2. Place the seeds in a clean cheesecloth and squeeze thoroughly to extract the pure juice.
  3. Pour the pomegranate juice into a large pot and bring to a boil over high heat.
  4. Boil for about 3-4 hours, stirring constantly until it thickens into a syrup, then cool and transfer to a jar.
