Cuisine

Kutucluk, made by placing minced meat, onions, and local spices into a dough prepared with bulgur and cracked wheat, has been kept alive for generations in Merkez homes. This dish, served boiled, has an important place in Şırnak food culture.

Ingredients

  • 2 cups of bulgur for meatballs
  • 1 cup of cracked wheat
  • 300 grams ground beef
  • 3 onions
  • 1 bunch of parsley
  • 1 teaspoon red pepper flakes and salt

Preparation

  1. Wet the bulgur and cracked wheat with warm water and knead until it reaches a dough consistency.
  2. For the filling, sauté the minced meat, chopped onion, and spices in a pan and let it cool.
  3. Take pieces of dough, open them up, fill with the prepared meat filling, and close.
  4. Boil in salted boiling water until the meatballs rise to the top.
