Cuisine

It is served by cooking cracked wheat, placing it on a large tray, opening the middle like a pool, and pouring melted butter and strained yogurt. Traditionally consumed at crowded tables in Merkez villages, this dish is a unique example of the cuisine of Türkiye.

Ingredients

  • 3 cups of cracked wheat
  • 500 grams strained yogurt
  • 3 tablespoons butter
  • 1 teaspoon red pepper flakes
  • Sufficient water and salt

Preparation

  1. Boil the cracked wheat with water and salt until it reaches a porridge consistency.
  2. Spread the cooked wheat onto a large serving tray and make a hollow in the center.
  3. Smooth the strained yogurt with warm water and pour it into this hollow and over the wheat.
  4. Heat the butter with red pepper flakes until foamy and drizzle over the dish.
