The cleaned tripe is stuffed with a mixture of rice, minced meat, and spices, sewn up, and cooked in large cauldrons for hours. Ingredients
- 1 set of sheep tripe and intestines
- 1.5 cups of rice
- 200 grams of minced meat
- 1 onion
- 1 tablespoon of pepper paste
- Salt, black pepper, mint
Preparation
- Scrub the tripe and intestines with plenty of rock salt and vinegar, washing until completely white and clean.
- Prepare the filling by mixing rice, minced meat, finely chopped onion, pepper paste, and spices.
- Sew the tripe pieces into pocket shapes, fill them with the mixture, and sew them completely closed.
- Place the prepared offal in a deep pot, add water, and cook for about 2-3 hours until tender.
